Raúl Pérez is one of the most admired figures in Spanish wine. For years without a winery of his own, working as a flying winemaker, he achieved what very few have: putting Ribeira Sacra on the world’s wine map.
His vines grow on near-vertical slate slopes. There, century-old Mencía vines produce tiny, concentrated grapes.
